French Toast has always been and still is one of my absolute favorite Breakfast Recipes. That’s why I’ve already shared some easy French Toast Recipes here on my blog in the past. However, it was definitely time for a recipe makeover since I’ve changed a couple of things since then, turning my basic recipe into the BEST Vegan French Toast Recipe! Honestly, I’ve got you covered because this eggless French Toast is delicious and made with non-dairy milk, cinnamon, vanilla, maple syrup, and gluten-free chickpea flour. It’s really super simple and only takes a few minutes to prepare, making it a perfect sweet breakfast that’s even easier than making pancakes!

Quick & Easy Vegan Breakfast
To be honest, I can’t count anymore how often I’ve made eggless French Toast, because it has definitely been that much, haha! Anyways, I think that this is positively proof that I‘m not lying when saying that I LOVE it! Over the years, I’ve tried a lot of different variations, because there are so many possibilities for how to substitute eggs! Also, you can choose to either pan-fry your dipped bread slices or bake them in the oven. (Continue reading for details.)


How to substitute eggs
The first time I made Vegan French Toast, I used flaxseed-eggs instead of regular eggs and that worked well! However, I’ve discovered that it tastes even better to me when using mashed bananas as an egg substitute. Since so many of you often ask me what to use instead of bananas, I tried yet another version and used chickpea flour, which as it turns out, works perfectly too. But, to be honest, I really can’t understand people who don’t like bananas!

How to cook Vegan French Toast
If you pan-fry your dipped bread slices, then your Vegan French Toast will get soft and moist but will still be perfectly golden-browned with crispy edges. This is, to me, the BEST way! Anyways, if you prefer to bake your dipped bread as I did with my Apple Pie Roll-Ups, it’ll get crispy which kinda reminds me of a crisp cake crust. Another option is to cover your bread slices with shredded coconut flakes before baking. Then it’ll taste like coconut crispbread, which is also known as „rusk“. How to serve
This Vegan French Toast is delicious with all sorts of toppings! You can serve it the same way as you enjoy pancakes, waffles or crepes. I love spreading some non-dairy cream cheese (or coconut yogurt) and mashed raspberries on top of my slices. Then I stack up my slices and add some more raspberries, pomegranate and a drizzle of maple syrup on top which definitely is like having dessert for breakfast! Anyways, feel free to use any toppings and fruit you like.

Ingredients
Vegan French Toast
- 3 tbsp chickpea flour or rice flour
- 1/2 cup non-dairy milk (125ml)
- 1 tsp vanilla extract
- 1 tsp cinnamon optional
- 1 tbsp maple syrup or sugar*
- 1 tbsp vegan butter or coconut oil
- 4-5 slices soft bread gluten-free, if needed
To serve
- non-dairy cream cheese or coconut yoghurt
- fruits of choice
- maple syrup or jam
Instructions
- Whisk the chickpea flour, non-dairy milk, vanilla, cinnamon, and maple syrup together in a deep plate.
- Heat the vegan butter or coconut oil in a skillet over medium heat.
- Dip a slice of the bread into the mixture and coat well on each side. Place in the skillet and fry on medium heat for 2-3 minutes on each side until golden-brown. (If using a large skillet you can fry 2-4 slices at the same time).
- Serve with desired toppings.
- Enjoy! 🙂
Notes
- This Recipe can easily be made gluten-free by using gluten-free bread.
- To make this French Toast reduced in sugar you can use a sugar substitute or coconut sugar.

Best vegan French toast recipe available – and I’ve tried my fair share of them! So many rely on cornstarch which I find gives a hideous texture. This one is just right. The maple syrup gives beautiful caramelization on the toasts.

Ich kann mich gar nicht daran erinnern, ob ich schon mal nicht-pflanzliche French Toast hatte. Aber diese pflanzliche Variante ist so unglaublich gut. Mehrfach zubereitet und für gut befunden. ♥ // I can’t remember if I’ve had non-plantbased french toast. But this plantbased version is so incredibly good. can you use normal flour in place of rice / chickpea. ?

I know I’m too late to answer the op’s question but, in case anyone else wonders the same, you can replace the chickpea/rice flour with regular flour. I don’t always have the other on hand, and use regular flour in this all the time. And it’s the best vegan French toast even with the substitution.
