Thank you for the recipe, it looks great. I was wondering what curd did you use? Can I use non-dairy Greek yoghurt instead?
And also will a flax egg work instead of a real egg?
Hi Theodosia!
There is a new version of my russian chocolate cheesecake right here: https://biancazapatka.com/en/russian-chocolate-cake-vegan-cheesecake/.
If you do not find any dairy-free quark in the supermarket, you can make it yourself. Simply fill about 1,5 lbs of dairy-free yogurt in a strainer lined with a cloth and let drain for 12 hours. That should make approx. 17,7 oz (500 g) of quark. Also, you could also use half amount of dairy-free cream cheese and half amount of dairy-free yogurt, or use silken tofu.
Thanks Bianca, I really appreciate your prompt reply to my comments. I don’t know how I missed the newer post. I would definitely try that out.
