This recipe for Oven-roasted Potatoes will guarantee perfectly-spiced, extra crispy golden potato cubes every time! They are tender on the inside with crunchy edges and crisp flavorful surfaces. They will make the perfect vegan and gluten-free side dish, appetizer, or snack.

Potatoes are one of the most versatile vegetables out there. There are many ways to prepare and cook them! You can turn them into fries, hash browns, potato cakes, and wedges and use them to make curry, soups, pasta sauce and dumplings! I love them in all shapes and forms, but my favorite recipes are those that require just a few simple ingredients and minimal prep and allow the natural goodness of the taters to shine through! And these oven-baked potato cubes certainly fit the bill!

The Best Crispy Roasted Potatoes Recipe
All you need are six ingredients (including the salt and pepper) and 10 minutes of preparation to make them. You can use paprika as I did or swap it with other spices, depending on what you like or have. I prefer oven-baking because they turn up less greasy, and you can also use your air-fryer or turbo broiler for the same result. If you do not mind the extra oil, you can fry these yummy potato crunchies too! I included the steps for alternative cooking methods below.
How to Make Roasted Potatoes EXTRA Crispy?
There is an easy way to get that extra crispiness out of your potatoes and I am sharing it with you today! It will mean adding 10 to 20 minutes to your prep time but it is so worth it! All you have to do is to soak the potato cubes in cold water for 10 to 20 minutes. Then rinse well with fresh water to wash out the starch. Do this several times until the water is clear, then rub them dry using a paper towel. Season and bake as instructed in the recipe card below. Try it and see how amazingly crisp they will turn out!

Ingredients Needed
- Potatoes: use baby potatoes, russet potatoes or Yukon Gold potatoes for the best results!
- Cornstarch: this will help make the oven roasted potato cubes light and crispy on the outside.
- Paprika powder: for an earthy and mildly spicy kick! You can use other spices that you like.
- Olive oil: will allow the cornstarch and paprika to coat the potato cubes better and help make them crunchier.
- Salt and black pepper: to taste.

How to make Crispy Roasted Potatoes

Step 1: prep and season potatoes
Wash the potatoes and dry them well. Then cut in half or quarters, depending on the size you want. Place the potatoes in a large bowl. Sprinkle with cornstarch and paprika powder and gently stir to coat. Then add olive oil, a little salt and pepper and mix again.

Step 2: bake until crispy
Spread the seasoned potato chunks on a baking sheet lined with parchment paper, leaving enough space between each. Bake in the oven at 392 ºF (200 ºC) for 15 minutes. Then toss and bake for another 10-15 minutes, or until golden-brown and crispy. Then remove from the oven and serve on the side with other dishes or enjoy just as a snack with ketchup, vegan mayo, guacamole, vegan queso or other dips.

Tips when Making Crispy Oven-Roasted Potatoes
- I prefer leaving the peel-on for more flavor, crunch, and extra nutrition. However, feel free to peel them if you prefer.
- Slice the potatoes in equal sizes so they bake evenly.
- For an extra creamy interior and crispy exterior you can boil the potatoes beforehand as I did in my patatas braves recipe.
- The baking time will depend on the size of the potato cubes. Pierce a pice with fork to see if it cooked through.
- Do not overcrowd the baking pan. Place the potatoes on the baking sheet in a single layer with spaces in between.

What Other Spices, Add-ons, and Dips to Use?
While I love how this recipe turned out, it is also exciting to explore different ways to enjoy roasted potatoes by using different spices, boosting the flavor with add-ons, and using different dips. Here are some ideas that I think you will also enjoy!
- Spices and herbs: try using garlic powder, onion powder, chili powder, or cayenne. You can also use fresh herbs like rosemary, oregano, thyme, dill, sage, and parsley.
- Add-ons: give the baked potatoes an extra boost of flavor by sprinkling them with dairy-free parmesan, sea salt, crunchy garlic bits, or chili flakes.
- Dips: aside from vegan cheese dip, vegan herb dip, aioli, vegan garlic sauce, and ketchup would also be amazing with the baked potato cubes.
Other Cooking Methods
- Using an air-fryer. Spray the basket with non-stick spray or use an air fryer paper liner. Preheat it to 368 ºF and bake for 8 to 12 minutes on both sides.
- Pan-frying- Heat 2-4 tablespoons of oil in a large skillet. Place the potatoes in the pan on a single layer for 3 to 5 minutes per side. Place the fried potatoes in a wire rack after frying them to keep them crisp.
Storing Notes
These are better enjoyed right away. If you have leftovers, however, you can place them in an airtight container once they have cooled down and store them in the fridge for up to 4 days. You can warm them up in the oven to give some of the crunchiness back.
