This Creamy Tomato Pasta (Spaghetti al Pomodoro) is a simple vegan pasta with tomato sauce recipe! It is very easy to make and perfect if you want a quick dinner that is delicious and satisfying!
Creamy Tomato Pasta
If I’m being totally honest, I had no idea what to call this pasta dish because it’s actually just pasta with tomato sauce. However, to me, it’s not just any tomato sauce because it’s my absolute favorite! And even though this recipe is super easy, it’s incredibly delicious and always perfect! Especially, when you’re crunched for time and need a quick meal, it’s a great choice!
Spaghetti al Pomodoro
Some people call this classic pasta dish spaghetti Napoli, and others call it spaghetti al Pomodoro. However, I don’t serve this creamy tomato sauce with spaghetti just because the sauce tastes amazing with any kind of pasta, no matter which shape. This time I served it with homemade pasta which is easier to cut into Fettuccine since I don’t have a pasta machine yet. Therefore, I find the title „creamy tomato pasta“ is more suitable than Spaghetti al Pomodoro.
Easy pasta with tomato sauce
To me, a delicious tomato sauce must contain sun-ripened tomatoes for the best tomato flavor. Trust me, it makes a huge difference whether you use un-ripened tomatoes that are just watery and almost tasteless or if you use red juicy tomatoes which taste like real tomatoes. And don‘t worry, you don‘t have to travel to Italy and pick up fresh tomatoes, because you can easily buy canned sun-ripened tomatoes in any store! Just make sure to check the origin which is usually stated on the can.
Flavorful tomato sauce
For tasty roasting flavors in the creamy tomato pasta, I always add roasted garlic and sautéed onions. Furthermore, spicing is very important, otherwise, the sauce will taste rather bland. In addition to sea salt and freshly ground pepper, you can also add tomato flakes, chili or Italian herbs to make the sauce even more spicy and flavorful.
Oven roasted Tomatoes for the best flavor!
To make this creamy tomato pasta even more delicious, I love adding oven roasted tomatoes on top! Especially, these little cute cherry tomatoes become more intense in taste and creamy when roasted. Maybe you’ve already tried my homemade sweet potato gnocchi with oven-tomatoes? If so, you probably already know how good it tastes!
Creamy tomato sauce
The best comes last! And with the best, I mean these dollops of vegan cream cheese between the pasta. When you add it immediately while your pasta is still hot, it will melt which makes your tomato sauce wonderfully creamy! However, it’s just an optional add-in. Of course, you can serve your tomato pasta how it is without any additional creamy ingredients.

Creamy Tomato PastaAuthor:
- 1 lbs pasta 500g
- 1-2 tbsp olive oil
- 1 onion
- 4 garlic cloves
- 500 g tomato purée canned
- 1 tbsp tomato paste
- 1 tbsp tomato flakes optional
- 1 tbsp Italian herbs as desired
- sea salt & pepper to taste
- 2 tsp sugar or to taste, optional
To serve (Optional)
- Oven roasted tomatoes *
- Vegan cream cheese
- pine nuts
- Cook your pasta according to the package instructions in salted water until al dente.
- In the meantime, make the sauce. Heat the oil in the pan and sauté the onion for about 2-3 minutes. Add the garlic and cook for another minute.
- Add tomatoes and tomato paste. Reduce the heat and simmer for about 10 minutes or until desired consistency is reached. Season with salt, pepper, Italian herbs, and a bit of sugar.
- When the pasta is done, drain and add to the sauce, tossing to combine.
- Serve your tomato pasta with dollops of vegan cream cheese, oven-tomatoes, toasted pine nuts, fresh basil or any toppings you like!
