I often make a big batch of homemade granola in advance to keep in my pantry so I can enjoy it whenever I want a quick breakfast. Not only is it super easy to make, but it’s also so much more delicious than store-bought granola. Also, it’s healthier because you can manipulate the ingredients to fit your needs. For example, adding less sugar or using only organic and gluten-free ingredients, so you can prepare your granola to suit your diet!


The perfect quick breakfast
When I don’t have much time in the morning or I’m just feeling lazy and still tired, making a quick granola breakfast bowl is always perfect. Just add some chocolate granola and fruits into a bowl, pour in non-dairy milk, and you’ve got yourself a simple breakfast that is satisfying and delicious. Especially when it contains chocolate, that always makes me happy! I mean who doesn’t love chocolate for breakfast? I would never say no!


Crunchy topping for any snacks or desserts!
I also love using this vegan chocolate granola as a topping for pancakes, crêpes, waffles, and overnight oats. Sometimes I enjoy it just as a snack on top of some coconut yogurt with fruits. I absolutely love when it’s combined with blueberries, blackberries, and bananas. However, I also like a red combination with strawberries, raspberries, and pomegranate. Well actually, it doesn’t matter which fruits you choose because this homemade granola is delicious just as it is!


Vegan and gluten-free Chocolate Granola
Nowadays, you buy almost anything already made. Not only granola but also foods like pasta, gnocchi, pancakes and so much more! There are so many different varieties to choose from, but let’s be honest, homemade is still the best, right? That way you know what it contains and you can adjust the ingredients and taste to your preference. Especially, vegan and gluten-free granola is not always easy to find. And when you find it, it is often very expensive!

Add your favorite ingredients
The great thing about this homemade Chocolate Granola recipe is that you can add any ingredients you like! You can make it either with gluten-free oats or regular oats. I’ve already made both versions very often and I find, there’s no difference in taste! I also like to mix the oats with other grains, such as spelt, wholegrain or buckwheat. And sometimes I also add some crispy rice cereals or amaranth and quinoa pops which makes the mixture crispier. Anyways, there are no rules, so feel free to get creative!

Nuts, seeds, chocolate chunks or other add-ins!
I usually add some extra chocolate chunks, making the granola more chocolatey, but you can leave them out if you want. What I also like is adding some chopped nuts, such as hazelnuts, almonds, cashew nuts, walnuts, pecans or shredded coconut flakes. But if you can’t eat nuts, you could add some pumpkin seeds, sunflower seeds or other seeds making it healthier. Another great idea is to add some nut butter, such as almond butter, peanut butter, cashew butter or tahini.

Chocolate Granola Recipe
Author:Ingredients
- 3 cups rolled oats 270g, or gluten-free oats*
- 1 cup chopped nuts or seeds 100g, optional
- 1/3 cup cocoa powder 30g
- pinch of salt
- 1/4 cup coconut oil 60ml, melted
- 1/2 cup maple syrup 120ml
- 1 tsp vanilla extract optional
- 2/3 cup chocolate chunks or drops 100g, optional
Instructions
- Preheat your oven to 340˚F (170˚C/150˚C fan).
- Mix the oats and nuts in a large bowl or pulse a few times in a food processor if you want a finer texture.
- Melt the coconut oil in a small saucepan over medium heat. Stir in the maple syrup, and vanilla until combined. Add the cocoa and salt and mix until a smooth paste forms. Pour over the oats mixture and mix well.
- Transfer the granola onto a baking sheet, spreading out evenly. Bake for about 20-25 minutes, stirring halfway the baking time.
- Leave to cool completely, then fold in the chocolate chunks, if using.
- Store in an air-tight container in your cupboard.

Hello, do you make your own chocolate chunks?
I use store-bought ones! 😛
I made it last evening (I had to substitute the coconot oil with grapeseed oil, as I didn’t have anything else on hand) and I LOVE this granola! It’s so delicious, chocolatey (and i didn’t even add any chocolate chunk or nibs) and CRUNCHY!
I’m sure that it will become a staple in my home.
