How to make Vegan Apple Cake from Scratch

Step 1: Prepare the baking tin, cut the apples and make the batter
Grease the sides of a 8 inch (2o cm) round baking tin and line the base with parchment paper. Peel and core the apples and chop into small cubes.
Mix the dry ingredients in a large bowl. Mix the liquid ingredients in a container. Then pour into the flour mixture and mix briefly to form a batter.
Fold in the apples, pour the batter into the prepared baking tin and smooth out.
Step 2: Bake the cake
Sprinkle the apple cake with slivered almonds and a little sugar to taste and bake at 356 °F (180 °C) for approx. 45-50 minutes until a skewer comes out clean. (If the cake gets too dark, cover with a piece of parchment paper). Then leave to cool and garnish with powdered sugar and pomegranate seeds, if desired.

- 14 oz (400 g) apples peeled & diced
- 1 ½ cup (180 g) flour all-purpose, spelt or gluten-free flour
- 1 cup (80 g) quick oats
- 2 tsp baking powder
- ½ tsp baking soda
- 1 pinch of salt
- 1 tsp cinnamon
- ½ cup (100 g) sugar type of your choice or mixed
- ½ cup (120 g) plant milk e.g. soy milk
- ½ cup (120 g) applesauce or another egg substitute
- ⅓ cup (80 g) oil e.g. butter-flavored canola oil or sunflower oil
- 1 tsp vanilla extract or seeds from a vanilla pod
Topping (optional)
- 4 tbsp slivered almonds
- powdered sugar
- pomegranate seeds
Instructions

- Preheat the oven to 356 °F (180 °C). Grease the sides of a 8“ (20 cm) round baking tin and line the base with parchment paper.
- Peel and core the apples, cut into small cubes and set aside.
- Combine the flour, rolled oats, baking powder, baking soda, salt, cinnamon and sugar in a large bowl.
- Mix the plant milk, applesauce, oil and vanilla extract in a container. Then pour into the flour mixture and stir briefly to form a thick batter. Fold in the apples, pour the batter into the prepared baking tin and smooth out. Sprinkle with slivered almonds and a little sugar if desired and bake the cake for approx. 50 minutes until a toothpick comes out clean. (If the cake gets too dark, cover with a piece of parchment paper).
- Allow to cool in the pan for 15 minutes. Then carefully remove and leave to cool completely on a wire rack.
- Garnish with powdered sugar and pomegranate seeds, if desired. Enjoy!
