  • 125 gr risotto rice
  • 1 onion
  • 3 cloves of garlic
  • 1-2 tbsp olive oil (or vegan butter)
  • 50 ml white wine (vegan)
  • 350 ml vegetable broth
  • 100 ml soy cream (or coconut milk)
  • 250 gr mushrooms
  • soy sauce
  • pepper
  • salt
  • chili
  • nutritional yeast flakes (or vegan parmesan)


  • Slice onion and chop garlic.
  • Heat up oil in a pan and roast onion with garlic briefly.
  • Add risotto rice and seasonings and roast for about 1-2 minutes more.
  • Wipe off with white wine, pour in vegetable broth and cook for about 15 minutes while stirring occasionally until the rice absorbed the liquid. Meanwhile add also soy cream now and then.
  • Clean and slice mushrooms.
  • Roast sliced mushrooms in a pan with hot oil until golden brown. Season with soy sauce and add them to the risotto afterwards.
  • Finally, season your risotto with nutritional yeast flakes, pepper, salt and chili to desired taste.

        This was a super easy and delicious meal! I added some frozen peas and vegan sausage, and doubled the recipe for my large family. Everyone approved, including the kids!!!!

    So ein leckeres Rezept. Champignon- Rahmsoße ist das Beste. Ich habe anstatt Sojasahne Cashew genommen. Yum yum

      Hi Sam,
      Instead of white vine you can simply add a bit more broth or cream. Just leave that white vine out.
      Instead of soy cream you can use any other plantbased cream or milk ?

    This looks fabulous! Instead of wine, (because it is an “acid”), could i substitute a lil balsamic vinegar?

      Hi Ruth,
      Thank you. Sure you can add a little balsamic vinegar to taste, if you like. You don’t need vine for this recipe. You can easily add more vegetable broth instead.

    This risotto is amazing and really easy to make, by far it is the best vegan risotto I’ve ever tried. I simply loved it, and the ingredients are easy to get I used coconut milk instead of soy cream and the results were pretty good! Totally recommend it.

    Great recipe to try for dinner tonight! Quick question though,
    What do you mean when you say, “Wipe off with white wine” ?
    When exactly do you add the coconut milk? You say “now and then” but not exactly sure when. After the 15 minutes or during the absorbing process? Please help! Thank you!

      Wipe off with white wine means the same as add white wine.
      And adding coconut milk during the absorbing process.
