Vegan Tortellini with Avocado Basil Hemp Pesto

Ingredients:

  • tortellini pasta

For the pesto:

  • 1/2 bunch basil
  • 1 ripe avocado
  • 2-3 tbsp pine nuts
  • 1-2 tbsp hemp seeds
  • ca. 50ml oil
  • 1-2 garlic cloves
  • 1-2 tbsp lemon juice
  • salt, pepper
  • Italien herbs
  • birch sugar

Toppings:

  • hemp seeds
  • peas
  • basil

Instructions:

  1. Cook tortellini according to directions stated on the package.
  2. Meanwhile, roast pine nuts in a pan without oil until goldenbrown.
  3. Strip basil leaves, wash and chop them.
  4. Peel and press garlic.
  5. Blend all ingredients for the pesto in a blender (add oil last until desired consistence) and season with salt, pepper, sugar and lemon juice to desired taste.
  6. As soon as the tortellini  are ‘done’ pour off the boiling water and combine with pesto immediately.
  7. Serve your pasta in a pasta bowl and garnish with hemp seeds and fresh basil.
  8. Enjoy ! 🙂
