Carbohydrates: Potatoes, Pasta, Rice, Quinoa, Oats
To make ahead & freeze: Gnocchi, Homemade Pasta, Ravioli, Pizza Dough, Vegan Naan, Tortillas, Bread
Vegetables: Cauliflower, carrots, broccoli, pumpkin, frozen spinach and peas, canned tomatoes or passata and corn
Protein (canned or dried): Lentils, beans, chickpeas, tofu
Fats: Olive oil, canola oil, coconut oil, vegan butter, nuts and seeds

I personally think that cooking and creating something delicious for yourself and your family is one of the best things to do. Besides savory simple lunch or dinner recipes, I’ve also included some sweet cakes and desserts into this round-up.
Some of the following easy vegan recipes call for fresh ingredients like bell peppers, tomatoes or fresh herbs. However, you can simply leave them out or substitute with canned or frozen veggies and dried herbs.
